WoM – Tropical Christmas Edition: Tropical Champagne Cocktail

This Week of Mixology is coming to end. As usual, the Christmas Edition ends with a cocktail that makes use of the bottle that was popped at midnight on the New Year. This year, we are welcoming the New Year with the Tropical Champagne Cocktail.

Tropical Champagne Cocktail

  • Ice
  • 2 oz coconut rum
  • 4 oz pineaple juice
  • 1 oz grenadine
  • Prosecco, enough to top off the drink
  • Maraschino cherries, for garnish

In a large wine glass filled with crushed ice, add the rum, pineapple juice, and grenadine. Top the drink off with Prosecco. Stir to mix. Garnish with maraschino cherries.

That is a very nice cocktail for a sunny New Year Day afternoon. Or any sunny afternoon really. When put together, add the grenadine last, it will slowly sink to the bottom creating that soft layering effect. Serve it like that, it makes a good impression. The drinker should mix it themselves before drinking.

Prosecco is certainly recommended in general. However, any sparkling wine leftover will do, like my Californian Chandon I opened last night.
